3 THINGS YOUR EXTRACTION SYSTEM “EXPERT” IS DOING WRONG

Now, last month we looked at some of the mistakes restaurant owners and clients make when it comes to maintaining their extraction systems.

But of course, you are not the only one responsible for keeping that extraction system in tip-top shape! So, let’s take a look at some of the biggest mistakes extraction system “experts” make… the red flags that should tell you it’s time to call IKCS.

Using round ducting on a horizontal duct route

As it’s a horizontal run, the round ducting will cause issues after your service has been completed. According to SANS regulations, it’s absolutely essential to install square ducting on a horizontal run, so make sure you keep your extraction system guy responsible!

Not replacing silencers when saturated with oil

Did you know your silencer also collects oil? That’s why it needs to be replaced every 3 to 5 years. Of course, your extraction system service provider should know this, so if they leave you hanging, call us! IKCS provides a fully detailed report on site after each service, and most cases there is a silencer that needs to be replaced – which, if left unattended, can cause serious issues.

Neglecting the air flow of your extraction system

It’s essential for your extraction system supplier to ensure that your air flow is sufficient for the type and amount of cooking you are doing, and to check whether or not the fan needs to be upgraded. If your extraction fan isn’t working like it should and there is insufficient air flow, you are technically not allowed to trade as this is a risk for your kitchen staff and customers.
