4 EXTRACTION SYSTEM MISTAKES TO AVOID

Even though we’re the experts in extraction systems, we can’t look after your system alone – it’s a team effort! Over the years, we’ve seen customers make big mistakes in terms of managing and maintaining their own systems.

But luckily, we’re here to guide you in the right direction, to help you avoid the pitfalls and take good care of your system!

 

Irregular Extraction System Services:

Depending on the type of cooking you do, your extraction system should be serviced every 1, 3 or 6 months, according to the SANS regulations. We go to great lengths to ensure that our clients are informed when they’re due for a service. However, as a client, it’s your responsibility to stick to this schedule and book regular services to avoid your extraction system becoming a fire hazard.

 

Cooking with Coal or Fire

Cooking on an open fire has become quite the trend, and many clients make the mistake of cooking with coal or smokers under the main extraction system unit. One of our clients goes through over 40 bags of coal a week, which greatly increases the fire risk and makes the system dirty faster. We therefore advise such clients to change from a monthly service to a biweekly service schedule, to reduce the fire hazard.

 

Not Cleaning the Filters

The filters inside your extraction system get dirty very quickly – so don’t wait for your service to get it cleaned. It’s important that the kitchen manager take ownership of cleaning out the filters on a daily or weekly basis, and also replace filters when they disintegrate or break.

 

Forgetting to Clean Drip Trays

Oil builds up in your drip tray on a daily basis… and if you forget to clean it, the canopy will start to drip oil which can cause a fire! That’s why it’s important for your kitchen staff to ensure that drip trays are cleaned out every 2 to 4 days. It’s a messy job, but an important one!
